I’d like to install qubes onto a hp server. It’s an enterprise
rackmount thing, headless, so (planned) it’d be accessed via a (wrapped!)
ssh-tunnelled VNC. cpu is x86-64-v2 xeon x2 and ram is 320GB.
Has this been done/is this feasible/is there a howto please?

This should be as usable as your remote console is good.
It’s possible to directly expose the GUI over VNC (over a VPN of course) using sys-gui-vnc which is builtin Qubes OS, but it’s not perfect and you can’t do 100% of Qubes OS operations from it for security reasons, but it might be a good and secure alternative to the console.
Otherwise, if the hardware supports Qubes OS, I see no reasons for troubles.

The vnc would only be present because there’s no screen. The access is local-LAN.
The ssh tunneling also, only be to simplify things. Not accessed from the internet.
