Try it with btrfs as well, it works quite well.
I can confirm that this exact combination works very well with Qubes and with GPU passthrough specifically. It’s actually the config (with a 3080) I used when making this topic: Modern games in ultra 2K quality on qubes? It's more likely than you think!
I’d expect the Z790/Z890 to work as well, but I have not tested that.
