I’m running kernel-latest in dom0 because else I cannot use my external screen. However, sometimes when I update dom0 the kernel downgrades again which is a huge pain in the ass.
Does anybody know how to prevent the dom0 from downgrading or should I just stop updating dom0?

you could remove the regular kernel package if you feel brave enough 
Why is that brave and how do I do it?
i rest well to know that i have another kernel version to boot in case something goes wrong, but its not really brave i guess even with latest the installer keeps a few versions for you to choose in grub.
you can remove the kernels via dnf command in dom0
