I have my own dns server in my own homelab and I would like QubesOS to use it.
Could someone tell me where I should make the changes for it to be effective, both for dom0 and for qubes?

In your sys-net.
You can change it i your sys-net, and make sure that dom0 is not going through sys-whonix which has its own dns resolution.
