I’ve read that it’s advisable to have a mini-server at home, since that would offer better protection against chat monitoring. What do you think?
You may be able to find something at https://www.qubes-os.org/hcl/. I believe the https://novacustom.com/product/nuc-box-mini-pc/, but that’s just based on a hunch (NovaCustom’s hardware just usually works really well and they certify most of it).

I’m not sure what you mean by chat monitoring, I’ve resently learned about https://simplex.chat/ which looks quite funky, might be a solution. Finally a chat where you dont need a STUPID phone number to register lol.
As for qubes on a server - if you have a KVM console I don’t see why not, as in if you want to use it like a desktop, but to use it as a server-server, as in the thing that stands in a datacenter, or that is only accessed remotely, if you don’t want to access it using the kvm console all the time I’d rather look at sth like proxmox I think, which lets you do similar virtualization paranoia - Qubes really is build for desktops / laptops, not to stand in a datacenter. It wouldn’t be my first recommendation if you want to do security by virtualization isolation.
As you said stands at home I think you can just use a tower - but I really don’t get what problem you are trying to solve exactly. Can you tell us a bit more about your usecase?

What would that homeserver host? Sth like a matrix (the chat) server? Nextcloud? Things like this?
If its server-server, as in “provides services to the local network”, this is kind of the opposite of what Qubes is trying to be.

True, but Qubes OS is not designed for servers 
There is this old admin wisdom that you can make pretty much anything do pretty much anything, but it is usually the best approach to choose software that is designed for your usecase.
You can of course install Qubes OS on a hardware server with Hetzner and use it to serve websites - but it is utterly painful, because it is not build for that 
Proxmox, for example, is
Qubes is xen for laptops. Xcp-ng is xen for servers. If you want that small attack surface, thats how you get it.
I have run onion service from qubes, but thats probably not what OP was asking about.
@Melanie If you were specifically asking for qubes for a server, thats xcp-ng. Proxmox is a better start for home servers. Its popular with home labs at https://forum.level1techs.com/ Proxmox has its own forum, but thats mostly people using it at work.
If your into scripting, proxmox is great for this. We use it at work and rarely touch its webui.
