Obviously, I like to run Qubes entirely on minimal templates for obvious reasons and I know they’re not for beginners.
But I don’t want to be a novice at Qubes for long so I thought I’d ask for advice on how to replace default-dvm with a minimal template equivalent.

You make minimal template with everything you wan’t to be in default dvm and… replace it in dvm settings.
Alright and what do I not want to be in a default dvm if I want it to run with bare minimum components?
I don’t know what you wan and I don’t know what I want and I don’t know what to install for this things I don’t know which I want to run.
I can tell you what I’ve installed in minimal for protonvpn gui service qubes:

nautilus

qubes-core-agent-networking
qubes-core-agent-network-manager
network-manager-applet
notification-daemon
gnome-keyring
polkit
mc
top
proton-vpn-gnome-desktop
and I’m thinking about removing network-manager-applet and notification-daemon.
And I have problem with nautilus - without changing DBusActivatable=true to false in .desktop file it won’t start from it (menu). Maybe it need some additional package but I don’t know which.
As I said, don’t use minimal templates. You don’t become an advanced user by using minimal templates! And there is no obvious reasons to do that.
